This pic is from a breakfast special I made a few days ago. sold a few. The idea of cooking completely vegetarian is,i confess,not my strength but I realize that more and more of my guests are looking for healthier options and ..the customer is always right! ahh well most of the time any way. But this dish we tossed ideas back and forth ..i love having honest healthy discussions with my cooks and get the idea juices flowing. This is a grilled tomato with beet greens toasted thinly sliced english muffin and scramble egg whites and a sliced avocado to top it off..Instead of using spinach or arugula we decided to use the leaves from fresh baby beets and sauté them as you would spinach ..doing those small changes and using a different ingredient is what sets us apart from the rest.
