Seared scallops,grilled asparagus,chorizo grits,frisee and Texas olive oil drizzle

This was a special I made a little while back and it is making a great use of my chorizo. Me and my chef have developed a recipe for a chorizo spice mix that we use a lot of ,and it is an awesome recipe with a lot of flavor without being over bearing and to spicy. This chorizo is made with grinding pork and mixing our spice in to it.I personally feel that it adds a southern flair to it.
